We are delighted to confirm top celebrity Chef Jean - Christophe Novelli who will be opening our "Demo Den" and hosting two cookery demonstrations throughout the day. (Menu to be confirmed)

Master Butcher

Carve, Cut and Serve Pork Demonstration 

Enjoy a master class butchery demonstration on both days of the festival with Adrian Walker, Accredited Master Butcher and director of Golden Valley Meat & Game. 

Adrian was awarded this prestigious award in 2014 by the Meat Training Council, Butchers Hall in Smithfield, London. This impressive award makes him, at the time, one of only 14 in the UK and the only Accredited Master Butcher in Herefordshire, Worcestershire, Gloucestershire and Wales. 

Saturday 1st July @12noon

On Saturday, Adrian will be demonstrating how to cut up a side of pork. Come along and find out how and where each cut comes from, as Adrian skillfully demonstrates the technique of French Trimmed Rack of Pork and much more. He will happily answer any of your queries and questions. 

Joining the Master Class, Scott Davies, Sous Chef from Herefordshire’s renowned family restaurant, The Bell, Tillington.  Being Sous Chef, is highly demanding and requires taking on a vast variety of tasks in both culinary and managerial sector. The talented Scott has 12 years of culinary experience and was awarded ‘Young Chef of the Year’ two years running by Flavours of Herefordshire.  The Bell, Tillington offers a wide selection of feasts to suit all tastes, all sourced from high quality local Herefordshire suppliers. The Bell can always promise you a warm welcome and a unique dining experience. At the end of the master class, Scott will be servicing a pork dish for all viewers to sample. 

Adrian will then be raffling the whole carcass, cut and prepared, to one lucky member of the audience for a small donation to St. Michael's Hospice.

Chefs Challenge! 

Jean - Christophe Novelli will be joined in our Demo Den, by Kay Fox, owner of The Slinky Fox and will be challenging him to a "pizza - off!!"

This session will be allocated on a first come first served basis on the day. 

After the demo there will be a chance to ask the Jean - Christophe or Kay any questions you may have. 

 

There is also the opportunity to purchase a copy of his recipe book and have it signed by the man himself!

Cocktail demo with British Cassis -

At least five great ideas on how to use British Cassis!

In the rolling fields of their Herefordshire farm, grows a tiny currant. Rarely seen and little known, this succulent fruit is harvested under the summer sun and carefully crafted into the very finest cassis.

White Heron use a technique similar to winemaking in order to perfectly capture the intensity of freshly picked British blackcurrants.

 

Once the blackcurrant juice has fermented naturally with champagne yeast, we blend it with a little vodka to fortify and add sugar to bring out the rich fruity flavour.

We are thrilled to have founder - Jo Hilditch joining us for the event and showing us exactly how to make that perfect cocktail!

Peter Cooks Bread 

Bakery Demonstration

Peter is an award winning Baker with over 20 years experience in the industry. 

 

Over the years he has won numerous awards, including ‘Best Speciality Loaf’ at the Baking Industry Awards in 2013 for his Sourdough Seeded Loaf, and in 2014, Peter Cooks Bread was the overall winner of the World Bread Awards with their Ciabatta. 

The artisan bakery near Ledbury, Herefordshire, is a ‘Real Bread” bakery, which means that the bread is made without processing aids or any other artificial additives. The secret ingredient is time. Sourdoughs and long fermentation are a speciality. 

The bakery runs one day courses for home bakers, from beginners to those with more experience of bread making. 

Peter will be sharing some hints and tips around bread making, while exposing a few myths as well. He will be baking using wild yeasts or "sourdough" as well as bakers yeast, and making the most of local, Herefordshire ingredients.

Carve, Cut and Serve Lamb Demonstration 

On Sunday, Adrian will be demonstrating how to cut up a whole lamb. Adrian will skillfully demonstrate the technique of boning and rolling a shoulder of lamb, a cushion of lamb, lamb Noisettes and French trimmed Rack of Lamb.

Adrian will be teaming up with Glyn Bufton - Owner, chief taster and second chef at The Bridge Inn Michaelchurch Escley, Glyn is coming down from the hills above Hereford, on the edge of the Brecon Beacon National park, to bring you a local lamb dish with attitude.

The Bridge Inn Michaelchurch Escley is an award-winning place to eat and offers some fantastic cuts of meat which have been lovingly reared and skillfully butchered before arriving in the hills of Michaelchurch ready for the kitchen. 

 

The lamb dish Glyn will be demonstrating, is all about the quality of the meat, the freshness of the blend of spices, slow cooking and  local farmhouse cider married together to give you a match made in Michaelchurch.
